I am a foodie and someone who likes to eat at michelin star restaurants, and I would never eat at a place that has paid reservations. And why would anyone wait if anyone can just pay to get a table before them? Could a 10 minute wait turn into hours if "Express" customers keep showing up? What prevents people from just going elsewhere? This platform seems to fundamentally misunderstand why people eat out.
